Big pot of black-eyed peas

Every December, one of my favorite posts is my annual take on black-eyed peas, which are a must for kicking off the New Year. While there have been many delicious soups, snacks, and casseroles over the years, I often return to this big pot of black-eyed peas, which are slowly cooked with bacon, peppers, and Ro-Tel tomatoes. It goes well with cornbread, and I also advise collard greens for extra prosperity and good fortune in the upcoming months. This past year has been a doozy, but here's to brighter days ahead! Happy New Year! 

I love Texas caviar. This tangy, spicy combination of black-eyed peas, chiles, aromatics, and lime juice can be served as a salad, a side dish, or even a dip. Bright and lively, I enjoy it on New Year's Day but also year-round.

If you want to do something special with your Texas caviar, know that it makes a fine addition to creamy chile con queso. Serve with crisp, salty chips for New Year's Day Tex-Mex perfection. A new favorite!
