You got your dough to rise, then you tried to touch it lightly and… POOF! It deflates like a sad balloon.
I'll never forget the night I was trying to bake homemade bread while also dealing with a teething baby at bedtime.
By the time the baby was asleep, the dough in my loaf pans had risen nice and tall, but as soon as I gently touched it to brush with butter before baking, BAM! It collapsed on itself.
Talk about a "deflating" end to the day!
Tip #2: Don't let your dough proof longer than is necessary!
Most bread recipes will call for dough to double in volume.
Don't let it get too far past that point or it will collapse - when you gently touch it with your finger, it should feel full and puffy.
