Make one recipe, or make them all! You can easily swap the recipes in and out for the days of the week that work for you.
There are a couple meals in this meal plan that use grilled chicken - streamline that process and make double of one and use it for both meals. There are also crossover fresh ingredients between this meal and the toppings for the floating tacos (a great way to use up fresh ingredients).
The meat topping can be made when-needed or slow cooked in a crockpot. This is a great build-your-own style meal where everyone can add desired toppings. We like serving the taco meat mixture over chips.
This is a fun twist on pizza and a GREAT way to use up zucchini. It is delicious! You can add cooked, crumbled sausage or diced, cooked chicken, if desired.
We love serving this with tortilla chips or baquette slices or rolled up in tortillas or naan bread. If you are planning to have leftovers, add avocados just when serving.
This guacamole can be stored in an airtight container - spread it into a really even layer and press plastic wrap directly on the surface before adding the lid to the container.
