Hi reader, My kids come home from school absolutely starving, and if I don't have something for them to eat almost immediately, things can get dicey! 😰 So, last year I purchased 3-compartment bento boxes to create little "snackleboxes" for them to dive right into after school. Each compartment gets: 🍎 Fruit: apple slices, strawberries, kiwi, grapes, frozen mango, etc. 🥒 Veggie: snap peas, baby carrots, mini peppers, sliced cucumbers, etc, 🎉 FUN! Chips, mini cookies, muffins, fruit snacks, Monster Cookie Energy Bites. But - shhh! - although the energy bites look and taste like Monster Cookie dough, they're actually filled with wholesome ingredients like oats, almond flour, peanut butter, chia seeds, and honey. Gluten-free, easily made dairy-free, and made in one bowl in minutes, these easy bites are a smash hit for after-school snacking, or a healthier way to satisfy a sweet tooth. Stash them in the fridge for up to 5 days, or toss into the freezer so you'll always have some on hand!
