*I know this is a holiday weekend for many of you. I didn't add any festive Easter dinner recipes to this menu plan, since I just did an entire post with links to those recipes. But below, I did include a few of my favorite recipes that use up Easter leftovers, in case that's helpful. Also, if you haven't found time to make that carrot coffee cake yet (linked below), do not let another day pass until you plan to do so.*

Easily the yummiest way to use up a ham bone if you have one leftover from holiday dinner. This soup is hearty, wholesome, and intensely flavorful. Leftovers can be frozen for future lunches or dinners.
This is a fantastic meal to plug into the rotation when you need a quick and easy dinner to make right away (rather than a make-ahead meal). Keep in mind that cold, cooked rice works best in fried rice, so make some and stash in the fridge or freezer for this recipe.
I always plan to make extra of these tasty wraps to heat up for the week's lunches. They can also be frozen to heat up for future meals. If you use a rotisserie chicken for this, save half for the avocado chicken salad. We usually serve these wraps with fresh fruit and vegetables (with ranch for the veggies).
This salad makes a tasty dinner served with tortilla chips, in lettuce cups, or served on croissants or other bread. If you are also making the chicken wraps in this menu plan, a rotisserie chicken can be split between these two meals.
I almost didn't include this recipe because the photo is SO OLD. But it is an incredibly delicious breakfast or dinner and is wonderful with leftover Easter ham. Don't discount it - I promise it's worth making (and it is super easy and fast).

I don't have time for traditional yeasted cinnamon rolls this weekend, so I'm making the easier and faster biscuit variety. They are Brian's all-time favorites! So, so good. Every time I make them, I wonder how they haven't edged out regular cinnamon rolls altogether. π
I think I'm going to make half of them regular cinnamon-flavored and the other half orange rolls. YUM!
