Although salads are often thought of as light and crisp side dishes to accompany a more substantial meal, they are easily customizable and offer a world of possibilities. During the warmer months, I love serving salads as my main dish. There is something wonderfully cooling about fresh greens, your favorite veggies, and dressing coming together for an easy breezy dinner.
The key to making salads satiating enough that you won’t be hungry a couple of hours after your meal is adding enough protein to the leafy mixture. Some classic protein-rich salads come to mind instantly, including cobb salad, grilled chicken salad, and chicken caesar salad. These recipes make excellent filling lunches or dinners, and you can quickly toss them together if you have leftover grilled or roasted chicken from the night before. But there are lots of other protein options you can use to make salad more filling, including beef, seafood, nuts, hard-boiled eggs, or chickpeas.
