We’ve been checking out some new places in Paris and revisiting a few from the past. Here’s where we’ve gone, and what we’ve eaten… SensationWe have every reason to be wary of fusion restaurants, which often end up falling under the umbrella of confusion. When you don’t understand the foods and cultures that you’re trying to riff off of (or as some consider, rip off of), you get all sorts of weird combinations that don’t always work. But food changes, and immigration means people who are coming to another country learn to adapt and make do with local ingredients. And in some cases, sublimate the food to local tastes. Another barrier is the expectation that cuisines from certain cultures should be dirt cheap. I wince when I read people say, “But I can get a plate of potstickers for $3!” when they see someone charging more than that. I, too, eat inexpensive dumplings...
