ARPIL 2026 The arrival of April feels like a breath of fresh air! Literally! The slow, tentative shifts of March give way to something more certain. Longer days, softer air, and the unmistakable sense that the Earth is waking up in earnest. There are bright green shoots pushing through the soil now, buds swell on branches, and everything seems to hum with quiet momentum. It's a season of renewal, of fresh starts, and of leaning into the energetic expansion after the long, inward pull of winter. I'm so excited! There's no ingredient that captures this moment more beautifully than maple syrup. Flowing at the meeting point of winter's chill and spring's warmth, it is quite literally the taste of the thaw. Each drop carries the rhythm of the season - cool nights, sunny days, and the patient transformation of sap into something golden and deeply nourishing. It's a reminder that sweetness doesn't rush; it gathers slowly, shaped by time and place. I was lucky enough to meet a local, female maple syrup producer and visit her sugar shack last month, and I've been enjoying the harvest ever since. In March we boil, in April we enjoy! In the kitchen, maple syrup feels especially at home right now. Its gentle sweetness and rich, earthy notes bring balance to brighter, fresher flavours, while still offering a comforting depth on cooler days. It's as versatile as the season itself; equally suited to crisp spring salads, baked treats, or a simple drizzle over morning rituals. I am particularly in love with my latest recipe: Maple Apple Cinnamon Swirls with Maple Cashew Frosting celebrate the fresh maple syrup that is now in abundance. They are crazy chewy, gooey, and satisfying. I hope you will give them a try! I wouldn't be Canadian without celebrating maple in all its forms this month, honouring its roots, its rhythm, and the quiet magic it brings to our plates. INGREDIENTS 2 large apples (about 300g / 10oz) 2 Tbsp. filtered water 1 Tbsp. maple syrup 1/2 tsp. ground cinnamon Pinch of flaky salt Handful of chopped pecans (optional) 6 rice paper wraps 2 eggs, beaten 1 Tbsp. maple syrup DIRECTIONS: 1. Cut up the apples into bite-sized pieces and discard the core. Set aside. 2. Add the water and maple syrup to a saucepan over medium heat. Swirl to combine, then bring to a simmer. Add the apples, cinnamon, and salt. Fold to combine, the place a lid on top and let simmer for about 5 minutes. 3. While the apple are cooking, whisk the eggs with the water and put it on a large rimmed plate (that will fit a rice paper wrap). Create a large, clean surface to work with the rice paper on. 4. Once the apples have softened, remove them from the heat and stir in the pecans, if using. Season to taste. 5. Dip three rice paper wraps into the egg mixture, one at a time, and lay them on your work surface, overlapping them a couple of inches. Lay half of the apple filling down in a long line horizontally, almost to both ends. Carefully fold over the ends, then the long side closest to you, followed by the opposite side, so that you have a snake shape. Starting at one end, roll into a pinwheel shape, handling delicately so as not to tear the rice paper. Repeat :)
NOTES: Makes 2 large swirls Two Ways to Cook Stovetop: Melt ghee or butter in a skillet over medium heat. Let the pan get hot, then place the swirls. Butter the sides facing up. Let cook on the underside until golden brown, about 5 minutes, then flip and cook until golden. Drizzle maple syrup over top, flip again, and let it bubble for a minute. Remove from the heat, let cool slightly. Enjoy with a drizzle of icing. Air fryer: Preheat to 350°F / 175°C. Place the swirls on parchment, and air fry for about 5 minutes, until golden brown and crisp. Let cool slightly. Enjoy with a drizzle of icing. | | 1/3 cup / 60g raw cashews, soaked overnight 2 Tbsp. maple syrup 2 Tbsp. filtered water 1 tsp. vanilla extract Pinch sea salt DIRECTIONS: Drain and rinse the cashews. Place them in a high-speed blender with all other ingredients. Taste and adjust seasoning as desired. | | | | |
I get a lot of questions about sweeteners, and I tell them that I mostly use maple syrup in recipes because one, I live right at the source, and two, I appreciate the overall nutritional profile compared with other options. Maple vs. Refined sugar: maple has more minerals, polyphenols, and lower glycemic index Maple vs. Honey: different strengths - honey has enzymes and antimicrobial properties, maple has greater mineral density Maple vs. Agave: maple has a less extreme fructose load Maple syrup is still a sugar, but it's a less refined, more nutrient-rich option that aligns with a whole foods approach. Think of it not as a "health food," but as a more intelligent sweetener choice: one that offers massive depth of flavour, trace nourishment, and a gentler metabolic impact when used thoughtfully. Maple syrup also contains a variety of antioxidants, some of which are tautly unique to maple like quebecol, which is formed during the boiling process. Darker syrups tend to be especially rich in these beneficial plant compounds. If you live in an area that produces maple syrup, I encourage you to buy from a local producer, sugar shack, or farmers market this month, and enjoy the freshest, most delicious syrup of the year. This also allows you to experience regional flavours, while supporting small businesses, and you'll often get a better price compared to retail, particularly when buying in bulk. | | | | |
