The Mustard Pork Chops I Make for Easy, Crowd-Pleasing Dinners

These 5 Effortless Meals Taste Like They Took All Day Y’all, it has been a week. I’m heading into cooking for this one feeling extremely basic — but still delicious, obviously. If you’re also here for simple meals that taste like luxury, I’ve got you: Starting with Caesar Meatballs. Rachel takes the classic flavors of the dressing and infuses them into chicken meatballs — brilliant! Next, I’m reaching for the mustard pork chops that work double duty: I can rely on my boys eating them, and I love the creamy mustard sauce so much, I eat spoonfuls from the pan. Win-win. We’ll take a meat break with our perfect-for-early-spring tortellini soup with asparagus and peas and plenty of Parmesan. It’s a fun play — and ultimate shortcut — on the traditional Italian tortellini en brodo. Steak isn’t reserved for a special occasion in our house. I love having a couple of NY strips from Costco in the freezer at all times for quick dinners. For a true speed meal: Garlic Butter Steak Bites. Cut the steak into cubes, brown them in butter, then toss them in a garlic-parsley mixture. I always serve with potatoes — maybe if I can get them in the oven while the steak comes to room temp. We’ll finish with Rachel’s brand-new pesto carbonara. I’ll make my own pesto with a mix of parsley, dill, and a little mint (always beats store-bought!). The silky egg sauce and guanciale playing off the fresh herbs sound like a dream. START COOKING P.S. I aim for recipes that rely on familiar ingredients I already have in my pantry and drawers, and don’t require too much hands-on cooking time. (Fortunately, you'll find a lot of these on The Kitchn!) Novelty is important. Cooking dinner night after night can be relentless — I gotta feel excited by what’s on my plate, whether it’s a new flavor, ingredient combination, or simple technique to save some time.  I eat pretty much everything. I change up my proteins throughout the week with chicken, seafood, beef, and pork making frequent appearances. And there’s always room for pasta! That said, I’m not in my spicy era. I have two little boys — 3 and a half years old and 10 months — so my picks will mostly be recipes that shy away from too much heat.
