I'm so happy to report January is officially behind us. At the start of a new year, I always feel both energized and a little blue as the winter slog sets in. So this week has recipes that will brighten up your mood. Nothing does that better than a lemony dinner like our top-rated Creamy Lemon Garlic Chicken. (Pro tip: Serve this with crusty bread because you're going to want to sop up every last bit of sauce!) For the easiest soup ever, make it on a sheet pan instead of a pot! Rachel brilliantly roasts butternut squash, cauliflower, and onion until tender, then blends them up with broth and coconut milk for a totally hands-off, deeply flavorful dinner. Next up is Kelli's easy Basil Beef. Sure, it's not technically basil season, but why not treat yourself to a taste of summer in early February?! Keep the lemon train going with this One-Pot Lemon Ricotta Spinach Pasta. The delicious sauce uses the juice and zest of a whole lemon — this is exactly what I'm craving right now. My 3-year-old just discovered shrimp is his favorite protein (honestly, I'll take it), so I'm eyeing Christine's Ginger Scallion Shrimp. It's got my go-to condiment for amping up flavor — oyster sauce. I aim for recipes that rely on familiar ingredients I already have in my pantry and drawers, and don't require too much hands-on cooking time. (Fortunately, you'll find a lot of these on The Kitchn!) Novelty is important. Cooking dinner night after night can be relentless — I gotta feel excited by what's on my plate, whether it's a new flavor, ingredient combination, or simple technique to save some time.  I eat pretty much everything. I change up my proteins throughout the week with chicken, seafood, beef, and pork making frequent appearances. And there's always room for pasta! That said, I'm not in my spicy era. I have two little boys — 3 and a half years old and 10 months — so my picks will mostly be recipes that shy away from too much heat.
