I have the perfect weeknight dinner recipe that checks all the boxes you mention, is amazing as leftovers, and makes the kitchen smell wonderful while it simmers. One of my favorite ways to bring extra flavor to any recipe is by using condiments like miso paste and harissa. This saucy one-pot pasta is inspired by classic Bolognese and starts off much the same way, although the flavorful twist comes from a couple of spoonfuls of pungent gochujang (a savory and mildly spicy Korean pepper paste), which also adds a mellow heat that rises slowly with every bite. A splash of soy sauce also brings extra richness and umami to the sauce.
In this recipe for one-pot gochujang Bolognese, I take liberties to make this dinner weeknight-friendly (no two-hour simmer here) and keep dirty dishes to a minimum by cooking the pasta directly in the sauce.
