I had a little hiccup with this roasted mushrooms and tofu dish a few weeks ago. I loved the smoky flavours and spices, but the other components were a bit fussy and it was looking rather beige overall!So I locked back in and dreamed up this version with a little kale salad, creamy garlic dressing and seasoned crunchy bread crumbs. You make the other components while the mushrooms and tofu roast. Easy peasy!
