Make one recipe, or make them all! You can easily swap the recipes in and out for the days of the week that work for you.
This recipe uses cooked chicken, which makes it great if you have leftover chicken or have a rotisserie chicken available (I always try to buy an extra rotisserie chicken, take the meat off the bones, and store in the freezer for recipes like this). The leftovers reheat VERY well for easy lunches or leftover dinners.
The chicken filling for these wraps can be prepped several days in advance. The carrots lose a bit of their vibrant color, but the flavor is still yummy. For a heartier meal, you can add rice to the lettuce wraps.
This super easy (meatless) pasta recipe is best served pretty quickly after it finishes cooking (otherwise the pasta gets a bit overcooked and the sauce less creamy), so plug it in to a day where you need a fast meal that can be made and served right away. You can add in extra protein with grilled chicken or pulled pork.
This lentil soup is so yummy and hearty! We love it as-is, but you can add cooked chicken or pork sausage at the end of cooking, if you'd like. It's delicious served with drop biscuits or easy breadsticks.
This recipe also makes great use of a rotisserie chicken - so if you have rotisserie chicken meat for the sweet potato fajita recipe above, save half the chicken for this recipe. These wraps make really great lunches, so consider making extra for later meals in the week.
These baked and cooled pepperoni pizza rolls freeze great (for easy lunches and dinners later). The filling options are adaptable - they can be made meatless or with other types of meat, like ham, canadian bacon, sausage, etc.
P.S. I'm sitting at a volleyball tournament for my daughter all day today. I'm in the middle of reading probably the most random selection of books ever, and I brought all of them with me, because you just never know what kind of "reading mood" you'll be in, am I right?? 😜
I hope you're having a great weekend! I'll see you Monday with brand, new quick bread recipe that is SO GOOD and different than any other quick bread recipe on my website.
