It might surprise you to learn that making the perfect miniature chocolate chip cookies means tweaking an otherwise great chocolate chip cookie recipe.
I've got you!
Not only does this modified recipe work amazingly well for mini chocolate chip cookies, but I am sharing the best hack to portion and roll 60+ itty bitty cookies quickly and easily!
I've spent today getting this recipe ready for you - and doing laundry and unburying from a very messy house. 😜 I usually have Monday's new recipe ready to go the week before, but last week and weekend were extra busy with my daughter's volleyball tournament and some additional church meetings, as well as just general life stuff (and procrastination) that has me a bit behind today. 😉
We are headed to watch my nephew play in a playoff high school basketball game tonight! And then I need to buckle down and prepare for a presentation I'm doing (tomorrow!) in three advanced culinary classes at our local high school.
Normally I give presentations to grownups about how to plan a menu or how to feed a family...but this presentation is a bit different. The teacher asked me to focus exclusively on food blogging as a career and all that goes into it. I'm going to talk about the process of recipe testing, food photography, what it takes to get a recipe finalized and posted online, and how to make money as a food blogger. I also made homemade caramels for them, because I've learned a little food bribery goes a long way in holding a teenager's attention. 😅 And homemade caramels are a great option when there are gluten- and egg-allergies!
If there's time at the end of the presentation, I'm going to shift gears for just a few minutes and give them this handout, which is a really great guide for anyone learning to cook on their own (especially helpful for high school graduates).
