The last thing I want to be doing at 9pm, after getting the girls to bed, is working my way through a pile of dishes left over from dinner. Which is why I *love* a minimal-dishes meal!
This is a list of my favorite dinner recipes that use just one pan, involve very minimal prep, and are also REALLY, really delicious.
This list includes some of my family's favorites (my daughters request the Instant Pot Spaghetti at least once a week) and a few reader faves, too! I hope these recipes make dinner easy for you this week!
The most unreal part of this is that it's a salad that's made ENTIRELY on a sheet pan! Roast up some broccoli and bacon, toast some chunks of bread, and toss it all together with cheese and lemon.
Juicy pan-fried chicken with the golden exterior, nestled into a creamy gnocchi with the flavor of shallot and tomato and cream... yes, this is SO delicious. Love this with a green salad on the side!
One of our most popular recipes, for good reason! It's simple (chicken and peppers on a sheet pan!), adaptable (everyone takes what they want!), and just really, really good. I always look forward to it.
Just one skillet for this one! The egg cooks right onto the scallion pancake, and then all you need to do is sprinkle in your toppings - I love avocado and chili crisp.
Like I said, my girls request this all the time! I love that they can even make it themselves, and that it's all done entirely in the Instant Pot. Just one pot to clean up!
This is such a fun, good one when you don't know what to cook. Chickpeas, pearl couscous, tomatoes, and lots of herbs and feta! All the flavor, none of the mess!
This one might be the easiest on the list! A block of tofu crumbled and crisped right in the pan, a bag of instant rice, and the easiest peanut sauce mixed up in a jar. Love this one.
