Simplify How You Nourish Yourself | | With two months left of 2025, it's easy to feel a sense of panic creeping in. The rush to get everything done, the shorter days, the endless lists. It's the time of year when life speeds up just as your body asks to slow down. If you're feeling that push and pull, let this be your reminder: you don't need a new diet plan, a detox tea, or a sauna three times a week to feel healthy and achieve your goals. It's the basics, done consistently, that actually create change - eating in a way that supports steady energy, moving in ways that energises you, and protecting the habits that help you rest well, especially sleep. Small things, repeated often - that's where real wellbeing comes from. | | These zero-fuss noodles take just 15 minutes to put together, making them perfect for busy weeknights. They're flavoured with fiery chilli, maple syrup, tamari, spring onions and bursting with nourishing vegetables. | | SERVES: 2 TIME: 15 minutes FOR THE SAUCE 3 tablespoons tamari 1 tablespoon mirin (or use 1 tablespoon rice wine vinegar + ½ teaspoon maple syrup) 1 tablespoon maple syrup ½ tablespoon chilli oil 1 tablespoon cornflour 1 lime zested & juiced FOR THE NOODLES 275 g udon noodles 1 teaspoon olive oil 150 g baby chestnut mushrooms finely sliced 3 baby pak choi halved lengthways 100 g frozen edamame beans defrosted 1 bunch of spring onions finely sliced 1 red chilli finely sliced (optional) 1 teaspoon black sesame seeds | | METHOD 1. To make the sauce, simply whisk together all of the ingredients in a small bowl. Set aside. 2. Cook the noodles according to packet instructions. Drain and refresh under cold water until cool to touch.
3. Warm the oil in a large frying pan set over medium–high heat. Add the mushrooms and cook for 5 minutes until golden. Add the pak choi and cook for 2 minutes until softened.
4. Pour in the sauce, add the udon noodles and toss together until everything is coated in a thick glossy sauce, adding more water to loosen as needed. 5. Add the edamame beans and spring onions; cook for 2–3 minutes.
