Last week, I shared my 5 best meal prep hacks—and wow, you guys loved them! I received so much feedback, and many of you had great questions about how to actually use these hacks in everyday meals.
So, starting today (and for the next five weeks), I'm diving deeper into each hack, sharing extra tips, tricks, and real-life ways to use them to get meals put together quickly during the week.
Let's kick things off with one of my favorite time-saving hacks!
Freezing Spinach, Kale, and Other Greens
We've all been there… You buy a big bag of kale or spinach, use half, and then it sits in the fridge until it wilts, gets slimy, and ends up in the garbage.
Here's the fix: freeze your greens so they're always ready to go!
I learned this trick when I started making green smoothies, and now I do it all the time.
✔️ Option 1: Add greens to smoothie freezer packs (just grab & blend!). All my smoothie recipes work for this.
✔️ Option 2: Toss leftover greens in a freezer bag and freeze. Then use those frozen greens in soups, scrambles, or sautés—no need to thaw, just toss it into the recipe!
How This Helps:
- No more wasted greens = money saved
- Smoothies, soups, and sautés become faster & easier
- Fresh, nutrient-packed greens are always on hand
- Easily add more veggies to just about any recipe.
Try It With These Recipes:
 Zuppa Toscana Just grab a handful of kale and throw it in at the end! | |  Quinoa Egg Breakfast Bowl with Kale After the egg cooks stir in some kale or spinach! |
 Dijon Chicken & Mustard Skillet Add extra spinach and skip the pasta for high-protein veggie skillet. | |  Chicken Tortellini Soup Stir in spinach or kale for a big veggie boost. |
Other ideas:
- Stir into taco meat for an extra veggie boost.
- Toss into any soup.
- Stir into any one-pot pasta or rice recipe to instantly increase the veggies.
