Following the post about shacha noodles, here's another regional specialty of Chinese - the "knife-cut" noodles of Shanxi province. Yes, the name of the dish is literally "knife-cut" (or "daoxiao") noodles because of the way the noodles were formed - literally by slicing the dough with a knife so that the noodles fly into a pot of boiling water. After the noodles are cooked, you can add whatever topping you like and enjoy! I was fortunate enough to have this extremely large and satisfying bowl of knife-cut noodles in Shanxi province, its supposed place of origin, and man what an experience! First of all, you don't resist going into a small, hole-in-the-wall restaurant whose name is literally "come in and eat noodles". No you don't. As for the dish itself, not only was it cheap, you get UNLIMITED toppings (from 5 or 6 different choices, I don't remember) so you can try various flavours. The texture of the noodles was al dente the way it should be, and let me say it again - this portion is huge (though it might not look like it from the photo)! The restaurant might not even exist anymore but I will never forget the best bowl of knife-cut noodles I have ever had...!
