Just fyi, you don't have to make mashed potatoes for Thanksgiving. These cheesy scalloped potatoes are a fun—and equally crowd-pleasing—alternative. Fresh thyme adds lovely depth of flavor to the creamy sauce.

It's sweet and savory, full of celery, onion, and fresh herbs. It works beautifully with our homemade cornbread, which you can make ahead to save time (and oven space) on Thursday. In a pinch, store-bought cornbread works too!
