Last weekend I spent a day in Bankstown which is a vibrant Vietnamese hub in Sydney, jam packed with bustling eateries, banh mi shops stacked high with crusty rolls, and stores filled with fresh herbs like Vietnamese mint, perilla, and sawtooth, the kind you rarely see so abundant anywhere else.
