Years ago, we had a homemade sushi party with my cousin who loves to make sushi. He brought all the sushi materials, but he told me to make garlic edamame because it would be really good with the whole spread.
So I did. And through the whole night, I found myself reaching across the table repeatedly for just one more piece. And then just one more.
And now that I have two little kids, I would like to make a case for this being one of the most kid-friendly veggies of all time! My four-year-old, who almost never touches a vegetable, explored her way through a big bowl of this garlic edamame (pre-chili crisp) and declared herself an "edamame queen".
And she's not wrong—it's so delicious, coated with a garlic-infused oil and little crackles of chili crisp for those who can handle the spiciness.
