If only Past Honey knew how much Future Honey would be having a moment. I’m talking specifically about ‘hot honey’, which grew into a significant food trend over the past few years. Fried chicken, pizza, toasties, egg yolks and even ice cream - nothing was safe from the spicy drizzle. It comes, of course, from our love of sweet and spicy flavour combinations; better still, pour it over something savoury for extra tastebud-jiggling contrast. It’s glossy, sticky and luxurious… in short, it’s easy to see how it happened. Now, I’m seeing people put OTHER things in honey. Is your mind blown? OK, so it’s not a *huge* leap, but think about it: recipe writing is essentially about tweaks and what is putting seeds and spices in your honey if not a fun sidestep? It’s also an exceptional garnish for asparagus, which tends to be served more plainly; lovely, but we’ve a season to embrace here lads. It’s time to bring some extra nuggets to the party. ...
