My recipes this week will reflect the fact that our wall ovens finally hit the graveyard last week. I'll be without oven-power for at least the next week, which feels like a lifetime!! Silver lining is that the old girls got us through the holidays, and all of the rugged use I put them through over the last year-plus (more about that soon...). It's too cold, and now snowy!, here for grilling, so I'm strictly stovetop. Which means soups will be the go-to.
Scroll down for my warming, cozy soup recipes to enjoy these weeks. I love every single one of them, so it will be fun to get them all going here, one after another. Who needs an oven, anyway?!
One thing I love to do when I ladle a bowl of soup is give it a good drizzle of extra virgin olive oil on top. Healthy fat + richness and flavor! Our squeeze bottles of olive oil are perfect for this! They make it easier to control the amount of EVOO in a go. Get them now at 20% off with code DRIZZLE!
Bless your hands,
Avgolemono Soup.
This one is so simple! Cooked rice, chicken stock, lemon, eggs. Sometimes I add shredded chicken. Pull out that sumac spice and dust it on top.
This is rushta, with a little more going on than the usual lentils-onions-noodles. I add lots of garlic as well as swiss chard to the mix (kale also works great here).
This is moghrabia (moh-guh-duh-bee-yuh!), with tender pieces of chicken, onion, broth, and Lebanese couscous, which is a larger pearl and very, very delicious.
