Truly transcendent squash!! π«
I bet you haven't had butternut squash like this before! This flavour combination honestly excites me, and it makes for a nice seasonal transition recipe.Sliced butternut squash is roasted with cherry tomatoes at the same time. I also roast some cooked lentils in spices and oil to get a crispy-chewy texture for garnishing the dish. All of that gets piled on top of a creamy, slightly spicy herbed yogurt sauce (which can be made up to 5 days ahead of time).Every bite of this vegan main/side is sweet, tangy, creamy, a bit spicy, crunchy, and tender at the same time.
