Coconut Cupcakes with Coconut Buttercream Frosting 🀍

Hello friends!

With some warmer weather creeping in, longer days, and the turn of the calendar, we are inching closer to spring, and these coconut cupcakes have long been one of my very favorite spring dessert recipes.

There are layers upon layers of coconut flavor built on top of one another in these cupcakes.

  • The cupcakes have both ground sweetened coconut and coconut milk in them.
  • I used my favorite vanilla frosting and added some coconut extract; it's a perfectly light and clean-tasting frosting. Not too heavy and definitely not too sugary.
  • The addition of toasted coconut to decorate the cupcakes puts them over the top!

These cupcakes are the perfect dessert for a spring holiday or get-together!
