Hello reader As intended I knuckled down last week and got my post written and schedulded in time before dashing down to Cornwall. What I've not been quite so good at is catching up since coming back. Hence your newsletter, which is now a day late. It rained the whole time we were in Cornwall. When we returned, we found it hadn't rained here at all. It's quite astonishing the difference in climate. Anyway, we've been feasting on nuts these last few days, roasted nuts to be precise. I like to take a healthy snack with me into work so that I don't binge on biscuits. These vegan friendly healthy roasted nuts fit the bill wonderfully. They're crisp, flavoursome and slightly sweet, yet they're made without cane or beet sugar. And no, honey doesn't come into the equation either. I use xylitol, which is a low calorie sweetener made from birch bark. It is refined, but it doesn't have anything nasty in it and is in fact quite beneficial. It's especially good for teeth. I like to have a mix of nuts, but you can use my recipe for just almonds or cashews if you prefer. Actually walnuts (and of course pecans) are really good too.
