Happy Saturday, AK fam!

And last weekend of February (what?!) I know that March 1st isn't *technically* the first day of spring, but it feels like a big step in the right direction. I've been taking a little bit of a step back from my usual posting and sharing on social media, but I'm excited about all of the things we have planned for the next few months.

Breakfast: Snickerdoodle Tahini Date Smoothie

A creamy, dreamy smoothie that tastes like a snickerdoodle cookie? YES. This vegan smoothie is sweetened with dates (no banana!) and is one of my absolute favs.

Lunch: Easy Creamy Vegan Tomato Soup (using canned tomatoes)

When it's still chilly outside and tomatoes aren't in season yet, enter this deliciously creamy tomato soup that uses canned tomatoes! It's so easy to make and has a couple of secret ingredients that make it extra special.

Snack: Pat's 4-Ingredient Paleo Crackers

And to pair with your tomato soup (or one of our hummus recipes) these easy, flavorful grain free crackers. You'll just need some almond flour and any seasonings you'd like for a super satisfying snack.

Dinner: Sweet and Sour Pineapple Broccoli Chicken Stir Fry

A 30-minute meal you'll absolutely fall in LOVE with. Crunchy veggies, sweet pineapple and juicy chicken cooked with an amazing sweet and sour sauce. Swap the chicken for tofu or chickpeas to keep it vegetarian!
