I can think of one recipe that checks all of those boxes:

Easy Veggie Enchiladas!

I love this recipe because it's so simple, yet so delicious.

I fill the enchiladas with a mix of roasted butternut squash, black beans, scallions, and a 4-ingredient homemade enchilada sauce that cooks up in 5 minutes.

Then, I smother them with more sauce and a layer of cheese that becomes beautifully browned and bubbly in the oven.
