January 2022 A Healthy, Happy New Year! | | It's that first week of January. A time of fresh beginnings. The last of the holiday decorations are boxed up, giving me a chance to do some spring cleaning. The fridge is stocked with local, seasonal produce (bring on the apples, citrus, cruciferous veggies, root vegetables, and leafy greens!). Sure, 2021 was fraught with challenges for many of us, but today we look forward to a bright, shiny new year full of hope and opportunity. When life presents difficulties, it also imparts its silver linings. For me, I'm laser-focused on the most precious things, such as spending time with the people I love and enjoying small, everyday pleasures, such as a walk with my dogs Teddy and Pixie after the rain, working on a puzzle at the dining room table, reading a good book by the fire, and cooking simple, wholesome meals for my family. Unfortunately, this time of year is marked by undue diet pressures (you know, those New Year's Diet Resolutions) that often lead people down the road of fad diets (please, no Keto!). The most healthful diet plan is one that is sustainable for the long-term; an eating style that you don't have to go "off of" because it's so unbearable, and that promotes optimal health in the long run, not just short term weight loss. And it just so happens that the diet pattern that is good for people, is also good for the planet. One of the most powerful ways you can reduce your risk of disease and lower your environmental footprint is to eat a more plant-based diet, filled with a variety of nutritious, whole plant foods.
