Last week, after sharing my favorite smoothie recipes, one reader asked for other options to pack in some veggies if you don't feel like drinking a smoothie. That's a great question!
If there's one thing I learned about myself this last decade is, I'm not a girl who sits on the couch and snacks on raw vegetables or eats a piece of fruit If I didn't find a way to infuse fruits and veggies into recipes, I'd never eat them. Good or bad, that's just the way I am.
So, another favorite way to add vegetables into my diet is with soups.
✅ Soups are mostly liquid, so they are a great way to stay hydrated and full.
✅ Soups can include lean proteins, tons of fiber, and other nutrients.
✅ Soups are easy to make. Throw everything into a pot and cook.
✅ Soups are versatile. You can add just about any vegetable into the soup, so it's a great way to use up leftovers.
✅ Soups can be made ahead and frozen, making it easy to have a healthy meal on hand.
Here are my rules for making the healthiest soup recipe.
๐ All ingredients need to be organic and free from additives, pesticides, preservatives, or other chemicals. This keeps the soups clean and nutrient-rich.
๐ There needs to be protein to keep me full and satisfied, whether beans, chicken, or turkey.
๐ Mostly broth-based to keep the saturated fat and calories under control.
