I love a good alternative risotto, and this barley one feels just right these days. It's so creamy and hearty. Using pearled barley gives us perfectly starchy results in a reasonable amount of time. For flavour, I turn to a lot of my favourites: smoked paprika, sautéed shallots, miso, and fresh dill. Caramelized, spice-roasted carrots go on top.
