Happy Monday my friend and Happy New Year!!
I hope your 2022 is off to a good start. I hope you're tackling goals, making plans, most of all staying healthy!
We're doing our best over here in the Barefoot household. Poor little D has come down with a nasty bug, so her 2022 is leaving some room for improvement so far.
But that's fine! This just means I get to get all cozy with her on the couch and watch endless amounts of Nick Jr. Not too shabby if you ask me.
OH! Speaking of cozy and comforting, I made you dinner! It's a healthy and lightened up version of a comfort food classic:
Truth be told, this is one of Tim's favorite dishes, so it was a lot of fun to test on him.

To make this dish, we have the usual suspects: tender chunks of beef, savory mushrooms, egg noodles, and a delicious and lightened up cream sauce that turns this dish up to an 11.
It's a one pot meal, because you definitely do not need the headache of dishes going into 2022, and it's delish to the max.
