In the fall of 2021, I met casually with a dietitian friend of mine who shared that she advises her clients to eat vegan until dinnertime. I was curious so I decided to adopt this tactic during the week and truly noticed a difference in my daily energy levels. I feel lighter! I'm not suggesting you make any big health changes without talking to your doctor first, but wanted to share my experience with you.
That said, many of these recipes fall into the vegan category as well, and so they have become lunchtime staples for me, in addition to being great options for the whole family for dinner.
