The food we packed for Part 2 of Skip Year

Hey reader, 

The days leading up to us leaving for the beach were absolutely insane.

  • My husband needed all hands on deck for his magnesium lotion business. (He added a few new products to his shop and they HAD to be wrapped up before we left!)
  • Our tile guy was working on our kitchen backsplash. (This project started in March… 7 months ago… let's not go there just yet. I'm still a little wounded.)
  • My son turned 14 (WHAT?!) and we hosted his birthday party.
  • My daughter was invited to THREE Halloween parties. (Since we're spending so much time away from home this year, we're saying "yes" to as many gatherings with their friends as we can.)


Honestly, we didn't pack ANYTHING until the day before we left.

This is so not like me, LOL!

When we packed for our Road Trip, I had lists upon lists and had everything nearly ready to go a full week ahead of time.

My October self thanked my July self, because I pulled out one of those lists and just packed the same thing I did back then, with a few minor exceptions of course!

This time, we have access to a grocery store, so it's not the end of the world if I forgot something. At the same time, I wanted to bring as much food as we could, since I've already paid for it! Plus, with my daughter being sensitive to gluten AND us being gone for the holiday season, I wanted to bring what we'd need for holiday baking. 

Here's everything food related that we packed for our time at the beach:

Spices:


Condiments:

  • Olive oil
  • Coconut oil
  • Apple cider vinegar
  • Red wine vinegar
  • Mustard
  • Lime juice


Foods:

  • Cashews
  • Canned Tuna
  • Canned Salmon
  • Shelf-stable almond milk
  • Olives
  • Coconut milk
  • Rolled Oats
  • BBQ sauce
  • Einkorn flour


Perishables (essentially cleaning out the fridge before we left):

  • Spring mix
  • Baby carrots
  • Green beans
  • Potatoes
  • Onions


For the national park trip, I packed enough for 8 weeks. For our beach trip, I only packed enough to get us through the first week or so… basically so our first shopping trip wasn't so massive, and so we could go a few weeks without having to buy the non-perishable foods we eat most often.
