Hi hi! Cannot believe Everyday Dinners comes out T-W-O days from today!! It's like my birthday and Christmas wrapped into one and I am so giddy just thinking about it! The book has SO many amazing ways to make life easier, and today I'm sharing just a couple secrets with you that I haven't really talked about before! These are two ways I make dinner come together super fast, when we're in a rush, need a grocery run or I don't feel like cooking. I almost ALWAYS default to eggs and tortillas - like the breakfast tacos you can find in Everyday Dinners! I almost didn't include that recipe because it's so simple, but it's also SO delicious and comes together in minutes, that I couldn't resist. I'd say 98% of the time, I made those when I don't feel like cooking dinner. Literally anything can become a chopped salad. It's true! I love chopped salads. And if we have leftovers, I will often turn them into a chopped salad. I'll make my base salad (like my house salad!) and then chop up our leftovers - whether it's the bang bang salmon burgers or the broccoli pesto pasta. It's a great way to avoid cooking something new, use up the leftovers and get in some more veggies at the same time! Simple as that! I'd like to think I'm pretty good at coming up with new recipe ideas (considering I do it for a living!) but there is something so comforting about knowing you have a few standby meals to fall back on.
