Hey there reader,
Memorial Day weekend is the official start to summer - well, at least in Buffalo, NY. You see, here, it's snowing or cold ten months out of the year. Okay, maybe not that long, but it sure feels like it. And, once the snow melts and the sun is out, I'm ready to be outdoors.
So, this weekend is our time to get the garden planted, deck furniture out, and the pool open. Even though it's A TON of work, it's one of my favorite times of the year - summer is almost here!
I'm going to be busy this weekend, so I'm taking advantage of the ease of grilled marinated chicken recipes.
I have five chicken marinades that I make over and over all summer long.
- Chipotle Honey Lime
- Italian
- Greek
- Honey Mustard
- Sweet and Spicy Asian
Each one:
- Uses pantry ingredients.
- Is clean and free of additives and preservatives.
- Is easy to prepare.
- Is delicious.
I'm going to double up on these chicken marinades. I plan to grill some this weekend and then freeze the rest of the chicken in marinades to prepare simple meals throughout the summer.
