| Hello again! Does it feel like Summer yet? My son just had his last day of 1st grade this week so we are officially on summer break! If you have some fun Memorial Day plans this weekend, I'm sharing a few easy recipes that are perfect for a Summer party, along with a meal plan for your week ahead. Check it out below! This Blueberry Crisp is the perfect Summer treat! It's made with almond flour, so the topping is gluten-free and Paleo friendly, and it takes just minutes to assemble. Easiest Vegan Lasagna. Lasagna can be an intimidating dish to make, but this recipe is truly as easy as it gets! I'll walk you through the process, so you can see what each layer is supposed to look like. There's nothing to cook before you assemble the lasagna, so the prep work is a breeze! P.S. It's ridiculously easy to make, and it makes me feel like I'm eating at a 5-star restaurant when I add it to my meals! Sunday: Veggie Burgers and Crispy Baked Fries. The perfect combination for a holiday weekend! The veggie burgers can be made ahead of time, if you want to simply heat them up for a gathering later. (Or an easy lunch during the week.) Monday: Greek Pasta Salad. A refreshing way to eat more veggies! I love using chickpea pasta in this recipe, which keeps it gluten-free and adds extra plant-based protein. Tuesday: Veggie Wraps with Romesco Sauce. We eat this at least once a week, ever since I nailed-down the recipe for this sauce. My husband and I are both obsessed! Wednesday: Curried Chicken Salad. I usually meal prep chicken once a week, and this is what I do with what we have on hand. I bet you could also use mashed chickpeas as a vegetarian swap! I love the creamy avocado-based dressing in this one. Thursday: Ratatouille. This is my signature "easy" version of the classic dish. No need to break out the mandoline slicer or arrange the veggies in a perfect circle! I serve this over quinoa or pasta for a complete meal. Friday: Jackfruit Pulled Pork. Shredded green jackfruit is tossed with a quick homemade BBQ sauce, for a delicious sandwich filling or salad topper. Try it with my Vegan Ranch Dressing, too! Saturday: Day off from cooking!
