Ahhh, you guys! Only THREE days to go until Everyday Dinners is out in the world! It's like I'm birthing another baby, I tell you. Today, I wanted to share three of our favorite quick and easy snacks that everyone loves.
A mini charcuterie plate. This is our go-to! I stick to four things: a slice of cheese, something green and crunchy (like cucumber), a few crackers and either a fruit or nut. It's so good. I love to utilize the Sauces and Dressings chapter from Everyday Dinners here, which is absolute GOLD! There are so many good ones in the book.
Egg and hummus toasts. This is exactly what it sounds like: we all love crunchy, toasted sourdough topped with hummus and sliced hard boiled eggs. It is SO satisfying. You can throw on some herbs or tomatoes too! I love to top mine with the Quick Pickled Onions that you can find in Everyday Dinners.
Peanut butter stuffed dates. I've never been a huge fan of dates IN things (I'm looking at you, granola bars), but I love to remove the pits, stuff them with almond butter or peanut butter and maybe even throw on a few mini chocolate chips. It's such a good treat - and filling too. Perfect for a sweet tooth!
These meals slash snacks get us through the week!! Sometimes they take the place of dinner, but usually I'll still put something together. That's the beauty of Everyday Dinners - meals that come together in 30 minutes or less, with minimal cleanup, make it doable even on busy days.
