My Meal Plan + Weekly Recap (May 2nd)

Hey there reader,

I hope you had a productive April! I know I say this at the beginning of every month, but I can't believe it's May. How are we into month 5 of 2021? Before we know it, Christmas will be here! Haha...but seriously!

I've been super busy with my business. Blogging is very different from when I started ten years ago, and with a big Google update looming over the blogging world, I've been focusing on a lot of back-end things to make sure Organize Yourself Skinny is ready.

Of course, being a business owner isn't the only thing I need to focus on. I still need to drive my kids to all of their activities and take care of the house. With everything going on, it's a miracle I've kept up with exercise and my meal plan.

Trust me, it's not an easy task, and it hasn't been all roses. However, I've kept meal prep and exercise a priority, which has helped me stay focused in the other areas of my life.

Here's my meal plan for this week.

Breakfast

Gluten-free banana nut muffins

Protein Power Mason Jar Salad

Dinner

Sheet Pan Chicken Fajitas

Slow Cooker French Onion Pot Roast with Cauliflower mash

Cheeseburger Stuffed Peppers

Leftovers

I'll prepare or assemble the granola, muffins, and dinners on Sunday. I'll make the smoothie the morning I drink one.

My Exercise Plan

I follow the weekly exercise plans in the Organize Yourself Skinny eBook & 30-day Workbook Bundle. This week is a combination of cardio (treadmill) and strength training with hand weights.

This past week I only completed three days of exercise. So, this week I want to commit to 5 days. I want to increase the intensity of my workouts because I've been getting a little lazy on the treadmill. Also, my goal is to start working out by 6 am so I can be ready for work no later than 9 am. Last week I didn't get on the treadmill until 7 am, and it threw off my whole day.
