May 2021 Spring Clean Your Diet | | Doesn't May look a little brighter and feel a bit lighter this year? The world is beginning to open up, just as our Earth is in full bloom. The timing is both moving and poignant when you reflect on the past year and the gift of perspective we've received. That's why my focus this spring is on the things that really matter to me. I'm embracing spring cleaning in a more meaningful, broader sense—I'm spring cleaning my diet and I invite you to do the same for a healthier you and a healthier planet! Still revved with Earth Month energy, I'm taking a minimalist approach. I'm starting by organizing my pantry, rotating foods to reduce food waste, and categorizing items so I know what I have and where to find them. Then I'll remove countertop clutter and overall excess, from duplicate cooking equipment to long forgotten kitchen gadgets. Next, I'll stock the fridge with spring produce from my neighborhood farmers market and tend the spring plantings in my own garden to make the most of the season's finest plant foods. Then, with every delicious, nutrient-rich plant-powered meal I prepare, I'm reminded of the greatest gift of all this Mother's Day month—a life nourished with gratitude, joy, and good health.
