| Happy February! I don't know about you, but I'm excited for this weekend because our home team, the Kansas City Chiefs, are playing in the Super Bowl! It's much more fun to watch when a team you love is actually in the game, but if I'm being honest... I'm still mostly in it for the fun game-day snacks. (See below for ideas!) Cooking Videos If you enjoy watching me cook in my own kitchen check out my latest videos, and follow along step-by-step! Crispy Baked Tofu. Those of you who have already tried it this week have deemed it "restaurant quality" tofu, which makes me so happy! Grab all of my tips for making flavorful, crispy tofu that is delicious enough to serve as an appetizer on its own. Peanut Sauce. I've been testing variations of this sauce for months, and this is the winner! I love pouring it over my salads, tossing it with noodles, and using it as a dip for veggies and baked tofu. You will literally want to lick your plate clean once you try it. Here's What You Missed If you haven't visited the website this week, here's what you missed: Vegan Spinach Artichoke Dip. I wanted to get this recipe up in time for the Super Bowl, because it's such a crowd pleaser! It's dairy-free and super-fast to prepare, and I've already seen several of you making it on Instagram with rave reviews. Use the leftovers on pasta or sandwiches for an elevated meal! Game Day Snacks If you plan on making something fun to snack on while you watch the Super Bowl, here are a few of my favorite ideas: Dinner Ideas for the Week Need some dinner inspiration? Here are some delicious ideas to help! Sunday: Vegan Nachos. This is the type of game-day food I'll be eating while watching the Super Bowl. If you have leftover sauces, they are also great on burrito bowls or tacos salads for lunch during the week! Monday: Baked Tofu & Peanut Sauce salads. Stir the sauce together while the tofu bakes! I'm loving the combination over chopped romaine lettuce, shredded carrots, and green onions. If you need something even more filling, try adding cooked grains, like quinoa, to your bowl. Tuesday: Slow Cooker Chicken Tacos. This has quickly become a favorite in our house. If you need a vegetarian version, try my jackfruit tacos, instead! (They are ready in only 20 minutes.) Wednesday: Instant Pot Lentil Soup. One of my favorite soups of all time! If you don't have an Instant Pot, there are stove top directions under the recipe in this post, too. Thursday: Kale Pesto Pasta. This is my favorite way to use up a bunch of kale lately. Use chickpea pasta to add more protein to your meal, and keep it naturally gluten-free. Friday: Sweet Potato Lasagna. This recipe uses sliced sweet potatoes instead of noodles, for a nutrient-packed dish. It features a creamy white bean sauce instead of cheese, and tastes ultra-comforting. The leftovers should help with weekend meals, too! Saturday: Day off from cooking!
