ube whoopie pies

Hi everyone! Have you ever had ube before? We fell in love with it the first time we tried it in a creamy milkshake at a local restaurant. Ube is a Filipino purple yam, and its sweet, nutty flavor and striking color make it so fun to cook with. Today we're featuring it in the form of these cute ube whoopie pies. Two soft, cake-like ube cookies are sandwiched together with a smooth coconut marshmallow cream. These chewy "cookies" are bursting with classic ube flavor, complemented by a smooth and silky coconut center.
