The casserole can be assembled 12 hours before baking. It also makes a great take-in meal for others. | |  If using a rotisserie chicken for the enchilada casserole, you can likely use some of the meat for this quick and easy meal. The sauces and veggies can be prepped the day before. |  This taco recipe is great for a weeknight when your time frame allows for a 30-minute meal. The chicken can be used in tacos or on salads. AND, if you make this at the beginning of the week, you could easily double the chicken and use leftovers in the enchilada casserole recipe above. YUM. | |  Serve this soup with crackers, 1-hour breadsticks, or the cheesy breadsticks linked below. The leftovers of this soup reheat really well over low heat on the stovetop, which makes it a great meal to prep ahead for dinner or easy lunches. |  This light and fresh pasta is the creamiest served pretty quickly after making, so plug it into a night when you can make it and serve it right away. The bacon is optional (leave it out for a meatless meal) but super tasty. Conversely, you could easily add grilled chicken or cooked chicken - stir it in at the end and warm through. | |  This veggie-loaded meal is super tasty and hearty served over brown or white rice.
