This salad actually started on one of those busy days when I needed something quick but still filling.
I had some steak in the fridge, a can of chickpeas in the pantry, and a few vegetables that needed to be used. What brought everything together was the chimichurri.
That part always reminds me of my dad. He grew up in Uruguay, and his chimichurri recipe was almost always on the table, especially with steak. It's one of those flavors that always takes me back to him.
Adding a spoonful of it to this salad turned a quick lunch into something I've been making again and again.
Steak and Chickpea Salad
Tender slices of steak, chickpeas, crisp vegetables, and chimichurri tossed through everything.
It's the kind of salad that actually eats like a real meal. Fresh, filling, and packed with flavor in every bite.
Chickpeas make it extra satisfying, soaking up the dressing and adding texture that works really well with the steak.

Chimichurri comes from Argentina and Uruguay and is traditionally served with grilled meats. It's made with parsley, garlic, olive oil, vinegar, and herbs.
