A Thrice-Made Crockpot Meal, A Beautiful New Cookbook, Baked Steel Cut Oatmeal, Irish Soda Bread ☘️ & More

Good morning, Friends.

Twice in two weeks, I heard two women, my dental hygienist and a fellow hockey mom, describe their favorite crockpot meal:

Place chicken breasts, taco seasoning, a jar of salsa, a can of black beans, and canned or frozen corn into a crockpot. Cook on low heat all day.

Many of you know, I love my crockpot for beans (see here, here, and here). But as my blog's recipe archives reflect, I have had little success with my slow cooker otherwise.

So I was skeptical as I found myself shopping for this recipe. Both women called for breasts, but, predictably, I couldn't not buy thighs.

The assembly was simple, taking all of about 3 minutes to unload everything into the pot...

... 6 hours later, it was done...

... and it was delicious! And everyone loved it!

I served it with shredded lettuce (top photo), grated cheese, guacamole (purchased), and chips, and everyone assembled bowls as they pleased. Incredibly, 2 pounds of meat fed all six of us, thanks to the help of all the fixings.

But, Friends, the real miracle here is that dinner prep was essentially done by 8 am. I have now made the recipe three times and foresee it becoming a staple. This recipe is not on the blog, but I've typed it up in a Google Doc in case any of you want more guidance on the quantities. As always, I'd love to hear from you if you give it a go.
