It's February, and my main goal for the recipe lineup at home this month is simple and comforting meals. We're also going to be leaning into some desserts in our house this month, just to keep the little joys flowing, which my kids are pretty excited about.
This is a list of the February recipes I've got on my list for my family this month - nothing fussy, nothing overcomplicated, just solid, comforting, actually exciting meals that make for easy dinners (and treats). π
I love this recipe for meal prep for myself, but also make it a lot for lunch or dinner with friends because it feels like restaurant food! Love to pair it with turkey sammies, too.
Exactly what we need as the days get warmer! Basically a quick and beautiful roasted chicken skewer (or not a skewer, if you're extra short on time) that is loaded with fresh, zippy flavor.
The crunch of the tortilla, the drippy egg yolk, the lacy edge from the roasted enchilada sauce and cheddar cheese, the pickled red onion on top… this one's a real experience.
This is always a hit! Really easy, really delicious, really satisfying. Especially with pre-chopped stir-fry veggies and a quick shake of sauce in a jar, it's the perfect crowd-pleasing weeknight dinner.
