Happy New Year! Who is ready to get back to some normalcy and a feel-good meal routine again?! (Meee!)
I'm craving the obvious this week: lots of color, good protein, cozy soups, fresh sauces, and flavors that keep things interesting.
These dinners are simple enough for real life, comforting enough for winter, and just… really nice to come home to. If you're easing back into work or school, and want meals that help you feel strong and well-fed (without any pressure or restriction attached!), this is your list!
There's something for everybody here! It has truly been such a win with my whole family. Roasted sweet potato halves, crumbled taco-seasoned chicken, and a creamy chipotle sauce that I could eat straight with a spoon.
I love these salmon burgers, and we make them all the time! If you keep your pantry stocked with canned salmon and freeze-dried dill, you can basically whip these up on a moment's notice!
Like a 7-layer dip, but make it salady with KALE and BEETS (and a lot of other good things). This one brings me a lot of joy - that perfect intersection of easy, healthy, and delicious!
Easy clean-up, no frying meatball mess, but still oven-crisp goodness. And the zippiest green sauce that does double duty in the meatballs themselves, and as a sauce on top. Love this recipe so much!
My alternative name for this is "Cafe Chicken Soup," because I made this for a play date with friends and we felt like we were eating lunch in a little café instead of at my cluttered dining room table surrounded by our wild kids. It's that simple and that good!
Can't get enough of this combo when I need something fresh! The sauce is like a fresher, greener cousin to pesto mayo: herb-loaded, just a little zingy, and plays well with pretty much everything.

The avocado mojo sauce is creamy and punchy, and those sweet potato wedges barely make it to the table - amazing what a little taco seasoning, cornstarch, and sliced onions can do to a sheet pan of roasted sweet potatoes!
This one is TOO EASY for all that you get back - lots of good protein and fiber, a BIG batch of food that keeps all week, and something that feels so perfectly delicious and nourishing. ❤️ Love this one.
I promise this is the prettiest, happiest low-effort dinner you will make this month. Roast the cauli with some spices, and serve it up over a thick swoop of hummus! I also love this with rotisserie chicken.
