I love a good salad, and I wholeheartedly believe that a good salad can be life-changing. For example:
Don't enjoy eating raw veggies? Slice them super thin and toss them with a garlicky, gingery dressing and tell me that's not one of the most yummy things you've ever made. So good.
Thought you didn't love kale? Mince it up in a food processor and slick it with a sweet roasted peanut dressing. Unreal.
These are the salad recipes I come back to every summer! They are primarily salads that are hefty enough to eat as a meal, with a few little ones that work best as extras (the tomatoes, the peach salad). I've marked the ones I make most with asterisks!

Personal fave right here! I love this salad - pulsing the kale in the food processor is a game-changer, and the roasted peanut dressing is so incredible.
Another personal fave! Creamy goat cheese or ricotta goes on the bottom of the plate, and then gets layered with massaged kale, beets, oranges, mint, and pistachios. I made this for a big dinner party a few months ago and my friends said it was their favorite dish of the night!
One of the stranger combinations I've ever loved! Couscous, sweet potato, black beans, spinach, feta, pistachios, and a lime basil vinaigrette! It's a lot of fun.
The flavor in this salad is incredible. This is basically a Laotian Nam Khao with fresh veggies, herbs, and a limey, salty dressing. I like to air fry the rice because it's extra easy.
There is a month every summer where I basically eat this and nothing else. Shallots, mint, supremely thin cucumber slices, hot honey, and really excellent peaches tossed to perfection.
You guys love this salad! Smoky chicken, fresh strawberries and greens, and a cilantro dressing. Originally a What's Gaby Cooking recipe from one of her first books (published with permission to promo her book several years ago)!
