Hi , With the 4th of July around the corner, we wanted to share a few simple, feel-good recipes for the long weekend - easy to make, full of flavour, and perfect for sharing with friends and family. First up: a real showstopper. Our Sticky Carrot & Harissa Tart is sweet, smoky, and one of those dishes you'll come back to all summer long. The carrots are roasted with maple and harissa until tender and caramelised, then baked on flaky pastry until golden and crisp. Serve it warm with herby greens, a big spoonful of hummus, or a dollop of yoghurt. It's easy, delicious, and made for sunny days! | | Sticky Carrot & Harissa Tart | | Sticky Carrot & Harissa Tart |

SERVES: 6 TIME: 60 minutes 12 medium carrots, peeled & cut into ¼″ rounds on the diagonal 100 ml water 1 tablespoon olive oil 2 tablespoons maple syrup 3 tablespoons rose harissa paste pinch of sea salt FOR THE PASTRY 1 x 320g sheet ready-rolled puff pastry 1 splash of oat milk (or any other plant-based milk) | | METHOD 1. Prepare the carrots and place into a saucepan with the water, olive oil, 1 tablespoon of maple syrup and a sprinkle of salt. Cover with a lid, place over medium heat and bring to a gentle simmer. Allow to bubble gently, uncovering to stir occasionally, for about 30 minutes until the water has been absorbed and the carrots are completely tender. 2. Turn off the heat and stir through the rose harissa and the remaining tablespoon of maple syrup. Adjust seasoning to taste. 3. Unroll the sheet of puff pastry and score the edges to give a 2cm / 1″ border. Prick the centre all over with a fork to prevent the pastry puffing in the middle while baking. Spread the cooked carrots evenly over the pastry, within the border. Brush the edges of the pastry with a splash of oat milk (or any other plant-based milk). 4. Bake at 220°C / 200°C fan / 425°F for 22–25 minutes, until the pastry is puffy and golden brown.
