But by the time I found out about it, I had just received some Quorn Mince, so I thought this would go perfectly in the recipe instead of pork. This is a fabulous, meat-free alternative that can be cooked in minutes! Ingredients for 2; - 300g Quorn Mince
- 1 small onion, diced
- 1 tsp of - cayenne pepper, paprika, garlic granules, curry powder & cumin
- 1 tbsp tomato paste
- 150g pasta
- 1 stock cube (flavour or choice)
- 100g fat-free Greek yoghurt
- 2 garlic cloves crushed
- Salt & pepper
- Fresh parsley
- 150g cherry tomatoes, halved
- 30g butter
- 1 tsp paprika
Method (Approx. 20-25 mins in total), it was as easy as; - Mix your yoghurt, crushed garlic, and some salt together first in a small bowl.
- Boil the pasta for 12 - 14 minutes, adding a stock cube - don't drain, you will need the water for the sauce.
- Meanwhile, fry the diced onion for 5 mins until soft and add in all the spices, plus the tomato paste.
- Chuck in the frozen Quorn Mince as it is, and add in some of the pasta stock water to make a thick sauce consistency. You may need to keep adding this as the mince cooks and absorbs the liquid. Fry for 10 mins.
- Melt the butter in a small pan and mix the tsp of paprika in.
- Now everything is cooked, plate up starting with the pasta, then the yoghurt, mince, paprika butter, tomatoes & parsley.
